Ideal substitute for bread and you only need 3 ingredient!


  • 1 cup amaranth
  • 2 cups water
  • olive oil
  • pinch of himalayan salt
  • dash of pepper
  • herbs (optional)


  1. Put the amaranth into the water and cook until the water boils. When it starts to boil, reduce heat and simmer for 30 minutes.
  2. Add salt, pepper and herbs of your choice. Let it cool completely (at least 1 hour) and then form a ball. Transfer balls to baking pan and flatten each ball with a piece of parchment paper previously greased with olive oil (or coconut oil) so you get thin crackers.
  3. Bake for 20 minutes (or until crispy) at 180 °C (356 °F).
