Ideal substitute for bread and you only need 3 ingredient!
- 1 cup amaranth
- 2 cups water
- olive oil
- pinch of himalayan salt
- dash of pepper
- herbs (optional)
- Put the amaranth into the water and cook until the water boils. When it starts to boil, reduce heat and simmer for 30 minutes.
- Add salt, pepper and herbs of your choice. Let it cool completely (at least 1 hour) and then form a ball. Transfer balls to baking pan and flatten each ball with a piece of parchment paper previously greased with olive oil (or coconut oil) so you get thin crackers.
- Bake for 20 minutes (or until crispy) at 180 °C (356 °F).
