This is a healthy version of a traditional homemade raffaello balls but they are just as delicious.
- 7/8 cup low-fat cottage cheese (7 oz)
- 2 cups + 2/3 cup shredded coconut
- 2 scoops vanilla protein powder
Mix low-fat cottage cheese and vanilla protein powder. Add shredded coconut and mix until you get a firm and solid mixture that is easily shaped by hands. Take small pieces of mixture (about tablespoon), place almond in the middle and shape the mixture into a ball. Roll balls into shredded coconut and refrigerate at least 1 hour before serving.
