These healthy cookies are soft and delicious. With no added sugar they are completely guilt-free. You can serve it even for breakfast!

Ingredients (for 30 cookies):

  • 1 cup mashed bananas (approximately 2 ripe bananas)
  • 1⁄3 cup peanut butter
  • 1⁄2 cup unsweetened applesauce
  • 1 tsp vanilla
  • 1⁄4 tsp salt
  • 1 tsp cinnamon
  • 1 1⁄2 cups old fashioned oats
  • 1⁄2 cup shredded coconut

Directions:

Preheat oven to 350 ºF. Mash bananas and gradually add peanut butter, apple sauce, vanilla, salt, and cinnamon. Stir in oats and coconut. Drop little balls of batter (a tablespoon) on your cookie sheet (you can line it with parchment paper). Flatten balls to a cookie shape and bake for 12-15 minutes. Let cool before serving. Enjoy!
