These muffins are simple but delicious. They are great for breakfast, snack or preworkout meal. On the other hand, they are also great dessert!

Ingredients (for 8 muffins):

  • 2 cups spelt or oat flour
  • 1/3 tsp salt
  • 1/3 tsp baking powder
  • 2 tsp melted coconut oil
  • 2 eggs
  • 1 cup mashed banana (about 2 bananas)
  • 1/2 cup blueberries (fresh or freezed)


Preheat oven to 350 ºF. Mix all of the ingredients except blueberries until you get a smooth batter. Fill your muffin pan with batter and place a few blueberries on top of every muffin. Bake for about 30 minutes (if a toothpick inserted in the middle of the muffin comes out clean, they’re done). Enjoy!
