Try this simple but healthy pancakes recipe for breakfast or quick snack.
1 medium banana, roughly chopped
2 whole eggs
⅓ cup almond meal (6-7 tablespoons)
3 tbsp desiccated coconut, unsweetened
½ tsp gluten free baking powder
1 tbsp coconut oil for cooking
Place all the ingredients in your blender and blend it until smooth. Take small dollops of batter (about one and a half tablespoons) and bake it on pan greased with coconut oil. You know it’s time to turn them over when little bubbles start appearing in the batter.
Serve with maple syrup or sugar free jam!
