Today we are bringing you a healthier version of blueberry & banana muffins. What is great about this recipe is that you can freeze muffins after they are baked and them use them when you need it. Enjoy!
Ingredients (for 10-12 muffins):
- 2 mashed bananas
- 2 eggs
- 1 cup + 1 tbsp milk of your choice
- 3 tsp coconut oil
- 1 cup + 1 tsp oat flour
- 10 1/2 tbsp spelt flour
- 2 cups oat flakes
- 2 tbsp honey
- 3 tbsp chia seeds
- 1/2 tsp baking soda
- pinch of salt
- 1 tsp cinnamon
- 1 cup + 1/4 cup frozen or fresh blueberries
Preheat oven to 400 °F. Mix the wet ingredients: mashed bananas, eggs, honey, milk and melted coconut oil. In a separate bowl mix the dry ingredients: both kind of flours, oats, chia seeds, baking soda, salt and cinnamon. Add dry ingredients to wet and mix gently. Fold in the blueberries and gently stir them in the batter.
Pour the mixture evenly into muffin molds and bake for 25-30 minutes. As soon as they baked, remove them from the muffin molds.
Tip: What to do with the rest of the muffins? Freeze them and thaw them when desired! You’ll always have a healthy snack / breakfast / preworkout meal at hand!
